on a 2000 alero 113k just to make sure. to check/fill my trans fluid I find a level surface, put it up on blocks making sure its level, pull the plug on the side of the tranny, add some fluid until it leaks out the plug hole, let it fully leak out the plug hole put the plug back in, cap it and Im done. (as long as it comes out red/pink)

Is the plug hard to get to at all?
Should I try n have the tranny hot or does that matter?
Should I change the fluid/filter now or is it too late?

I would drop the pan and change the fluid/filter, but NOT get a flush.
Your procedure for filling is correct, I don't recall the plug being too hard to get at.
I don't remember if it should be hot or cold, but I've never seen a trans that needed filled cold, so I would do it warm.
I would also use the new Dexron VI, as it is much better than the Dex III.
