Default No T-stat

Hello all, I am new over here and I have a question I hope you can help me with, my car cutlass ciera 1986, it overheated for a moment after coolant replacement, I thought it was the thermostat stuck, so I temporary removed it and now the fan stays on all the time, why is that ?
thanks !

My guess is that there is air in the system. After the coolant flush, did you bleed the air out?

I tried, but I couldnt take the screw out, so I poured the water slowly and pressing the hose... with the car running, so ... air in the system is an option...
